Delicious Cream Cheese Pumpkin Muffins

Celebrate the fall harvest with delicious cream cheese pumpkin muffins with just the perfect combination of flavors that will make them a traditional seasonal favorite.




  • 8oz cream cheese
  • 1 egg
  • 1 teaspoon vanilla extract
  • 3 tablespoons brown sugar


  • 4 ½ tablespoons flour
  • 5 tablespoons white sugar
  • ¾ teaspoon ground cinnamon
  • 3 tablespoons chopped pecans
  • 3 tablespoons butter

Muffin Batter

  • 2 ½ cups flour
  • 2 cups white sugar
  • 2 teaspoons baking powder
  • 2 teaspoons ground cinnamon
  • ½ teaspoon salt
  • 2 eggs
  • 1 1/3 cups canned pumpkin
  • 1/3 cup olive oil
  • 2 teaspoons vanilla extract

Preheat oven to 375.
Make the filling by beating cream cheese until its soft and then adding the egg, vanilla and brown sugar until the entire mixture is smooth.

Make the topping by mixing all dry ingredients and then cutting butter in with a fork until crumbly.

When making the batter sift flour, sugar, baking powder, cinnamon and salt. Create a well in the middle of dry ingredients and add the eggs, pumpkin, olive oil and vanilla. Beat together and then incorporate dry ingredients.

Pour muffin cups half full with batter and then add one tablespoon of the filling to the very center and finally add the topping. Bake at 375 for 20 to 25 minutes. To make them a little more festive – replace the white sugar in the topping with orange sugar crystals.
